What makes the glossy screen glossy?

Do these new unibody MacBooks and MBP's have a piece of glass in front of the LCD panel?
Did the non-unibody MBP's have glass too?

I think what makes a screen glossy is that it's not treated with matte coating, but I could be wrong.

Matte displays are indeed coated with an extra layer of non-reflective plastic.
The unibody MacBooks Pro and iMacs/LED Cinema Displays have a sheet of glass in front of the display, as well.

Yes. The matte option MBPs also don't have glass (which is why they're silver around the display rather than the black glass).
