I'm running either client in OS X. Seems to me when I use the GUI format, minimizing into the dock stops processing completely, althought it is listed on the team.macnn.com site as an optiimization tip. thoughts on this?

Minimizing into the Dock stops the graphics processing, leaving more CPU for the actual crunching. You can check this by opening Process Viewer and seeing what SETI's CPU usage is while in the Dock.
You can also open a Terminal window, and type "top" in, followed by the Return key. Top provides a lot more information, and CPU usage is in the first column.
The current clients were created and tested with 10.0.x. If the GUI client really does stop when minimized, then there will be a new GUI client soon. The CLI client reportedly is OK with 10.1. I do not have 10.1 myself, so I cannot check this yet.

As an aside, perhaps this could help RC5 users (i.e. minimizing the dock).
As far as seti goes, this is what I did to maximize performance:
-used a cache control program to increase the speed of my L2 cache on
my G4/400. This actually speeded up processing times by as much as
15-20 minutes. If you can do it, give it a try. The PowerLogix
cache control program is broken under 10.1 - they're updating it
however. Under OS9 there are several solutions. I've increased
my L2 from 199 mhz to 267.5 mhz and it works great.
-Use the text only client instead of the graphical - lots of CPU is
used to make those pretty patterns.
-Minimize Seti so it doesn't display on the screen.
-Eliminate or delete background apps (i.e. use Peek-a-boo for OS9).
-Kill the finder if you're on OS9 (this is if you're leaving the machine
to crunch while you go to work or school or whatever).
