Ok, I was thinking about mounting dual fans above my monitor ( I have an iMac ) to suck the air out... would the fans affect the monitor at all? I mean, considering they are RIGHT next to the tube and everything.... think it would affect it?

They probably would,
If you've ever put a magnet to your monitor (dont tho) you'll see it warps the picture and colors... Im not sure how well sheilded fans are magnetically, but even a little mag. feild will shift the picture.

If the motor in the fan isn't a permanent magnet type (very few are nowadays), the field will only be generated by current flowing through the armature etc. Do the math, a 5v or even a 12v fan's electromag will be insignificant compared to that of the HT coils of the tube. Don't even begin to get your panties in a bunch over it, no worries.
