Is it possible to modify the case of the old i-mac to allow for ventilation, thereby enabling one to get rid of that noisy fan (as with the new i-macs, if I'm not mistaken)??

Sure, take a drill and put holes all over the top and sides of the case.....
Seriously though, I don't think so. Does anybody know if the guts of the new iMacs are arranged differently then the new ones? Y'know, to allow for better air cooling? If they're not then drilling holes might work, although it may be a bit unsightly.
I never had a problem with fan noise in my Rev. B iMac. It was the blasted CD-ROM that threw me over edge. I finally sold the thing for 800 bucks, (not bad considering I paid 700 for it), and got a G4.
The G4 is silent as can be, even with 3 fans in it.

I am not sure exactly how but i know that the new "guts" of the iMacs are arranged quite differently to allow more efficient cooling without a fan than the originals. As for punching more holes....go for it, in fact get a hacksaw and take off all the plastic in the back and remove the fan while your at it. You just may need to blow on the chip from time to time to keep it from melting.

Apple went with new "short neck" CRT displays in the fanless models. I believe they use less energy, allowed the iMac logic board to be pushed further back in the case, and, coupled with another 14 months of industrial deisgn work, allowed a fanless computer. It's a wonderful thing!
