Just read this on MacPlay's website while downloading an update:

Due to current issues with all versions of OS X, turning on 3D acceleration will cause the game to run very slow. Please turn off 3D acceleration if you are running in OS X. If you are using 10.1.1 or earlier, use 16 bit color mode. Changes to OS X 10.1.2 allow 32 bit color to function properly.

I found the last sentence a contradiction to the one before it.

I am running Panther.
I am running 1.1.1 of BG2.

Should I run in 16 bit or 32 bit?
Should I turn 3D acceleration off?

Depends on your computer. I have an iMac 600 and I have to run with 3D off. If you have a 1 Ghz G4, I think you can leave 3D on. However, you won't notice any real differences in image quality with 3D off, so I'd leave it off regardless of your system.

Run in 32 bit if you have a good video card and a fast system.

BG II is an old game. In OS 9, I can run it with 3D animations on and in 32 bit color. In OS X, it just bogs down.

I've got a 16 MB video card, so a 32 MB card will be better and a 64 MB card will be much better. 32 bit color shouldn't cause too much of a performance issue. The 3D animations and the pathfinding nodes (?) will tax your CPU more.

A G4 1 GHz with 512 RAM and a 32 MB+ GForce 4 or Radeon is 'good enough' for BG2 in OSX in my opinion.

Don't underestimate the incredible sluggishness of that game in OS X!
