I just started playing Everquest because I finally got a Mac big enough to handle it and the other new games. I rarely see any other players online though. Is it always like that?

On a quiet time it usually gets roughly ten thousand people on. Yes, thy are almost done drastically improving the game.

EQ for Mac is, well, Mac only So you'll never see that much traffic.
You might want to try Shadowbane -- it's not as good as EQ, but it is cross-platform compatible and definitely more active.

World of warcraft should be out soon as well, uhh, well before x-mas 8-). Interest in that game is high as well.

Well what you need to do is join an guild or something where you can join in raids and quest.
