Far as I know, Aspyr never ported Thunder Island to the Mac side. Is it possible to use the PC game files – textures, maps, etc., – on a Mac version of the game, or are things more complicated than that?

Yes, it's possible, and I've done it.

I forget where I got the instrustions though... it think it was that "DAMN Clan" website...

can't provide linkeage,
but here's the legit way to do it.
you need the Ghost Recon:IT PC CD.
Install it on a PC or VPC
Copy the IT folder and place it in the correct location in the mac GR folder (can't recall exactly where though)
Update Mac GR to 1.4
-This allows you to run IT, but with many textures messed up-
Apply community made patch (26MB download) wich corrects the texture issue.
