Would it be better to buy a Windows game and run it out of Bootcamp, or a Mac version and run it out of Rosetta???

You really do not want to run a game in Rosetta, unless it's a very simple game.

If you don't have an Intel Mac, you can't run anything in Boot Camp. Or Rosetta, for that matter, though it doesn't matter since Rosetta emulates a PowerPC and non-Intel Macs actually have PowerPC chips;.

Tomorrow I'm buying a 2.66 Mac Pro so I'm trying to get some kind of idea on how to purchase games.

The answer to that depends on the game. With Descent 3 (one of the best games EVER!) you have to use the Windows version & use BootCamp- it was pre OS X. Anything will run better in BootCamp than in Rosetta, since there is no translation involved in BootCamp, but then BootCamp requires you to restart your computer. What I would recommend is to look up your game (behold the power of Google!) with "rosetta" in the search string, and see what other people have to say. Inside Mac Games is a good forum to look at for info.

Windows version + Crossover

Lets you stay in OSX, gives good performance, and they have most of the popular games.

Then your title doesn't make sense. It should be "Best Intel Way of Going About It...".
