Game recommendations

First, I only have OS X and XP available for gaming. I no longer have a Wii, and may get a 360, but not until later this year.
I recently have played through KotOR 1 & 2, Mass Effect, The Witcher, NWN2 (OC, MotB, SoZ), and Dawn of War (All expansions).
Currently I am playing through Fallout 3, and Empire at War.
I tend to like RPG and RTS games.
Any recommendations for games that I must try?

You need a Command & Conquer in there then. C&C 3 (OS X, XP) was pretty darn good. I wasn't a big fan of the Red Alert 3 (XP) gameplay, but of course, the cut-scenes are always nice.
A few other excellent RTS suggestions...
- Supreme Commander (XP)
- Company of Heroes (XP, From the makers of Dawn of War.)
- World in Conflict (XP)
- The Total War Series (XP, though I guess Rome Total War will see an OS X release. They're not quite an RTS either, and the Medieval ones are my favorite.)
You really have a lot of the RPG's covered. I'm looking forward to a few in the future, but I'd say you've got the good ones right now. Unless you've never played Baldurs Gate. Then get that.
Other random suggestions...
- Unreal Tournament 3 (XP, OS X sometime... it might be out by now. And only if you like UT-style gameplay.)
- GTA IV (XP)
- Gears of War (XP, I'm sure the Mac version is never coming out)
- Crysis (XP)
- Dead Space (XP)
- The Orange Box (XP)
There are more, specifically games I haven't played, but I can't really recommend them then. They just look awesome.
Oh, if you're getting an Xbox 360, you can get C&C3, RA3, SupCom, WiC, UT3, GTA IV, GoW, and Dead Space for that if you'd prefer.

I'm betting as a self-proclaimed RTS fan you've already played Starcraft/Broodwar, but if you haven't you really should. I've tried many RTS games but Starcraft is the only one I've ever gotten truly addicted to, and Starcraft 2 is coming out Soon™.

If you get any C&C game (or any RTS at all for that matter) you should get the Windows version. I know that, at least with C&C Generals and its Zero Hour expansion, there is no cross-platform multiplayer. So if you get the Mac version, you won't be able to play with anyone. That was also the case with a much older RTS called Age of Empires II.
My suggestion for an RTS, if you have a fast enough computer, would be Company of Heroes. It's a WWII-themed RTS focused on taking and holding territory. No building "houses" or gathering resources - taking territory automatically increases your population limit and generates more resources. It's a fun, fast-paced game that discourages turtling. The gold edition (includes the game and the expansion) is like $30 so it's not too bad.
Oh, also, it's by the same developer that made Warhammer 40k: Dawn of War, so if you've played that, the play style is very similar.
