Looked around and it's hard to even find a Aircraft / jet fighter game for even PC's. Any ideas?

Falcon 4.0: Allied Force for PC if you are looking for something with a lot of complexity. It was released in 2005 or 2006 so it's probably available for cheap somewhere.
