To play games designed for another operating system, you need a program called an emulator. Emulating a PS2 happens to be very hard - not even Sony can do it completely, instead electing to include part of the PS2 hardware (The "GPU", what Sony calls a Graphics Syntheziser) in the PS3 to be able to play PS2 games.
One well-known PS2 emulator is called PCSX2. It is designed for Windows and Linux, but apparently can be run on a Mac if you install the X11 windowing system. No idea of how well it works - it seems to be a work in progress, from the links I can find. One good place to start seems to be
