For 3D shooters, I'd recommend:
UT (there is a beta patch for OS X)
Deus Ex (OS 9 only)
Return to Castle Wolfenstein (finished version coming soon, demo is out)
Others that I haven't played:
Quake 3
Max Payne
There are also 2 STAR TREK titles, one based on STAR TREK VOYAGER and one on STAR TREK DS9.
Red Faction is out, but I'm not sure if I'd recommend it yet... I've just started it.

There are also 2 STAR TREK titles, one based on STAR TREK VOYAGER and one on STAR TREK DS9.
Voyager Elite Force runs native in OS X. I bought it a few months ago and
throughly enjoyed it. If you have a GeForce2 or 3, like I have, you won't
be able to watch all the cutscenes. This is a known bug with the OS X
GeForce driver (according to the Elite Force Readme).
DS9 The Fallen is OS 9 only and its not a FPS (its a third person shooter).
It probably won't run very well in Classic either. If you liked DS9, this
game is great. I am playing right now and I really enjoy it.
Some other FPSs that are out for OS X are Quake3 and UT X (Preview3). I
have heard that No One Lives Forever and Return to Wolfenstein are due out
next month.
I think that Aliens vs. Predator is out for OS X but I'm not sure if its
a FPS. If you like third person "shooters", you could also try Oni or the
latest Tomb Radier.
