If I setLaunchPath: then I can't setArguments: such that I would concatenate commands, e.g., `ls -l | awk '{print $1}'

What should I do?

Things like | are shell syntax rather than arguments to the command. You'll have to either
a) Call *sh with the whole script you want run, or
b) Do the concatenation logic in your code instead.
[vash:~] banana% killall killall
