I want to have my applications have a brushed-metal look and feel like the Apple iApps. Is there an API for this? or some other special trick?

In IB, check out the inspector for a window [or panel, or whatever,]... Attribues->Textured window checkbox

it's really that easy

Indeed. Note that this is 10.2-only. Read the Aqua HIG for circumstances in which textured windows are acceptable, and ignore all of Apple's violations.
