I'm just looking for a graphical toot that I can use to create tables,fields,links etc. and then have it generate the associated SQL script in plain text and print a PDF of the associated schema. Pretty straight forward.

Thanks for the post. phpMyAdmin seems pretty capable but it's an administration tool; what I'm after is a developer's tool.

I guess what I hope exist is a Cocoa based application; something along the lines of Apple's EOM that comes with Webobjects.
Unfortunately, that tool is bundled in Webobjects and that suite is overkill for what I need. Does anyone know if it can exist on its own and if it's available in such form?

Oracle's JDeveloper I believe does what I need but it's still in beta and is a Java app. As fond as I am of Java on the server side, it is too slow for my taste for client applications -but that's whole different topic.

Well, OpenBaseManager has a nice schema design tool.

Yup, that's the idea. OpenBaseManager is about 80% of my wish list. For one, it doesn't generate full scripts, only updates since the original create statements are automatic. The overall database seems pretty awesome but the UI tools can use some polishing.
