There are quite a few options
if you have os X try quicktime streaming server (free to download as darwin streaming server)
pros:
free
made by apple
nice web interface
cons:
somewhat funky interface
not as customizable as you may want
only os X

Shoutcast server
pros:
fairly powerful
lots of options
free
cons:
not by apple
not for classic computers (i think)

LeanStream
pros:
works in classic
some options
Cons:
somewhat quirky interface
hard to add songs to playlist
not by apple
