I am interested about Cocoa, what do you think are good books to start off with, people have recommended O'Reilly books. What doy you guys recommend?
Is reading a book and going through with it the best way to learn it? or just load up the app and guess?

Any good book. What I've found the most useful (after learning the basics) was:

PB has this capability but it sucks... The above is crispy clean.

Definitely Hillegass... then go to cocoadevcentral.com and macdevcentral.com (click on Cocoa Programming)

There is a lot of tutorials and sample programs for you to learn and practice with.
