I would like to either use Applescript Studio or Cocoa to setup a digital video player application for my kids. This would be playback only and the problem I'm having is determining the best way to seemlessly play multiple segments of video in case some of the content exceeds the maximum file size for the OS and has to be segmented. It would be nice if Applescript could control Quicktime Player to do this but I'm not sure programatically how it is done say with a PVR system.

The video would then be played full screen and output to a TV. My kids are young and don't understand that VHS tapes are fragile so I intend to capture the material for playback. I don't need full PVR functionality and I thought if it wasn't too much of a chore I'd like to cook up something myself.

Any help would be appreciated.

I would love to make a PVR as well - but your needs sound like mine. I just use a Tivo (series 1). The kids can run it easily and it is no muss no fuss.
