One thing I will say.. I am a mac bigot, and have been for a long time, my currently employeer made me use XP for all of my development work.. I ended up using Fireworks every day on XP...

When I finally got them to get me a mac, I wasnt happy with the macromedia products. On the windows side, they have tab browsing (sort of) for all open documents, and the ability to dock all panels to a consistant window... DAMN I WANT THAT... So that got me thinking. If there is away maybe using Usanity application enhancer, to have an application basically lock panels in to place, and list documents in a tab-esqe fashion... Im still working on this concept.. but I want to get to a specific document. right away. I think more people are getting this, look at tab browsing, or even xcode... its the way to go, IMHO.

Time to go back and watch my beloved colts get beat... (luckily I dont care about football)

I know DragThing has built in dock that shows open windows, but I haven't used it much. I'm not sure if you can customize it to just list windows for the current app, but that might be something to look into. You can customize the appearance of DragThing's docks so they look like aqua tabs, too.
