Have you learned any programming at all yet? If not, consider taking a course or start with a beginning book on programming in C. After that, learn basic graphics programming.
If you've never programmed at all, you may quickly become frustrated if you try to start with a full fledged MacOS X application (especially games).

For Mac related game development, check out www.idevgames.com .
What hayesk says is true though, tackle learning the programming language first. Once you can create some simple games (try a text-based version of BlackJack, for example) then you can work on adding the fancy graphics and sound that everyone hungers for.

I think I am in a similar situation as lord vader.
I had some experience in programming before, but mainly on OS independent code and definitely I have no knowledge of C++. So I guess I need to books and/or tutorials where it teaches how to use API etc in Mac OS X etc.
At the moment, I am looking at just get someone else's open source code and then modify / add my bits in.
Any recommendation?

Check out www.udevgames.com . It's a sister site to www.idevgames.com . They just had a game programming competition and all entries were required to publish theit source code. This might be a place for you to start.
Also, Pangea Software (makers of Nanosaur) recently published a book on Mac game development. You might want to check out their site at www.pangeasoft.net . Also, there are some OpenGL tutorials at http://divide.zerobyzero.ca to get you started with OpenGL in OS X.

Oops, no, no game programming (at least not yet).
I am more interested in done stand alone general OS X apps (at least for the time being). So game programming is not very helpful at the moment.

Well, my Musical Scales program comes with the source code (the URL is in my sig). You could always mess with that. I'd like to think I did a good job commenting the code.
You could search for OS X projects over at www.sourceforge.net for programs to delve into as well. Also, you could do the examples in the Cocoa documentation that are installed with the developer tools. I think there's a temperature converter example to get you started.
