From Working with Spotlight:
  • A set of importer plug-ins that are used to populate the meta-data store and content index with information about the files on the file system.
  • A plug-in API allowing you to provide meta-data and content to be indexed for your application's custom file formats.
However, all the documentation I've found only seems to be concerned with plug-ins for importing metadata, not content.

Could anyone point me at the documentation for how to get my custom documents' content indexed by Spotlight?

Just put up to 100K of text into the dictionary handed to you in GetMetadataForFile for the key kMDItemTextContent

As far as Spotlight is concerned, the contents of a file ARE metadata. To spotlight, the only data is file paths, which it also searches. The metadata importers give it document contents etc that it cannot read on its own.
