I have it set up on my Home network within the /Library/WebServer/ directory. Got the image, doc, css and mt.js separated from the other files in the location /Documents/moveable/static/

I have changed the mt.cfg file to point it's StaticWebPath to:

StaticWebPath /moveable/static/

But still the Publishing platform will not load up it's images, the url for the images is still looking within the cgi-bin where the cgi files are. Where am I going wrong?

probably the first slash. It's probably trying to load images from Macintosh HD/moveable/static/ and that probably isn't what you want. You can test that theory by creating those directories and trying it out.
