I'm not really a developer, just an interested party, so this may be a dumb question. I have seen the iTunes COM for Windows SDK but what about an Apple SDK? Where would I find the protocol for controlling iTunes with an OS X box?

You can control iTunes with AppleScript. Just open the iTunes scripting dictionary with Script Editor if you want to see.

The SDK is for creating plugins.

Specifically, this SDK contains "iTunesAPI.h", "iTunesVisualAPI.h", and "iTunesAPI.c" that developers will use to develop their own Plug-ins.
