Greetings,
I've pulled down the VISE installer for OS X and I'm having a bit of trouble trying to figure out how to require a serial number before letting my application be installed. I've tried to look in the documentation, but I didn't find much in the way of doing this.
Does anyone have any experience with this?
Can anyone provide me with some assistance on what to do?

You should be able to write a plug-in for VISE for implementing things like this. However, do you really need to do it in the installer? In fact, do you need an installer at all? You should avoid them where possible, and you could ask for the serial number on the first time you run your application.
