Need to set up email server for competition; what software?

I'm on a team for a Cyber Defense competition. We're setting up an example network, then teams try and break into it over about an 18 hour period. It's my duty to set up a Mac Mini as an email server. Here are the requirements:
This service will provide accounts for the staff with spam filtering and virus protection. A list of users will be provided. Additionally, configuration of cdcN.com is needed so that mail is directed to the appropriate server. Users should be able to check email from both inside and outside the corporate network using IMAP and web mail (POP is not required, but may ease things down the road). The IMAP and web mail connections can be secure (i.e., SSL), but this is not a requirement. The IMAP server should be accessible via imap.cdcN.com and web mail should be webmail.cdcN.com. If POP is used, it should be pop.cdcN.com. User accounts should be of the format USER@cdcN.com.
We'll have separate Web, DNS, Directory, etc servers and they'll be running XP, Windows Server 2003, and flavors of Linux.
What's the best solution as far as software? It's gotta be cheap/free (or at least a fully functional trial we can use for a week or two) so that limits us a bit. It looks like OS X Server has what I need, but I don't know if I can get a copy of that. Any ideas as to what to use and how to best accomplish this?

Well it looks like I've got a copy of OS X server available. What should I do to make sure it's secure?

Once you install and initialy configure OS X server, head over to the Server Admin app and continue with the Mail setup.
Setup the DNS first.
Make sure the Firewall is up and running. For Mail to work correctly you have to setup Open Directory, since this will authenticate the user accounts via LDAP. Under Open Directory (in Server Admin) choose the Connected to a Directory System Role, since that is what it looks like from your specs above.
Under the Mail section, go through the tabs (General, Relay, Filters, Quotas, etc.) and configure them as needed. There is a lot to be configured, so take your time. Use the manual to guide you. I would also leave POP out, and just use IMAP + Web mail.
