What are my options if I want to run a personal web-server(Java, cgi...)on My Mac (7100 and/or MacIIci)? Only shareware or Open Source options... I guess Linux or BSD would be my choice but I´m not sure.

linux is going to be your best bet... of course there is always webstar that may offer limited support for what you want to do.
