I'm new to MacOSX and Cocoa, with a background in C/C++ and unix. I found the header files however I'm not sure where the corresponding library files are -- also it isn't clear to me how to build .pbproj files or the equivalent from the command line. Cocoa apps aren't only built with visual tools, right?

You can build .pbproj files from the terminal using the pbxbuild command, but most UN*X applications use GNU autoconf. Read the newbies thread for some porting information.
