Good Server Maintenance Practices?

Hi all,
I'm running (or about to be running) a Webserver, FTP Server, File Server, Music Server, etc. on a 266 iMac with OS 10.2.6. (Not Server) I've partitioned the drive into a System and a Files partition, and enabled Journaling on both. I was just wondering if anyone here has any advice for good server maintenance, or just things to keep track off. Security stuff, Scripts I should set to run more often, less often, anything. Just looking for general advice. Thanks!
