Remote Admin for X.3 Server?

So we finally got our first xServe (in a sea of Win2000) in our server room, and I'm trying to stay out of the server room as much as possible. I know that the official admin tools work over the web, but they are mainly limited to starting and stopping services as far as I know. What's the best way to remotely see the machine's desktop? Apple's Remote desktop seems geared specifically for lab admin...is it a good choice for a server? Any security risks? VNC may be another option, but I'd have to go through SSH for that to be secure, and I'm not real sure how to do that in OS X. Any guides anyone would like to recommend?

Ideally it would be something like the way that Windows Remote Desktop works, but I'm open to suggestions. Seems odd to me that it's easier for me to admin a windows server from my mac than it is to admin another Mac. :-)

What is everyone else using to remote admin their OS X servers?

Workgroup Admin, Server Admin and Server Monitor fits my needs, but if you have to see the desktop, the Apple Remote Desktop is a way to go.
