I'm looking to get an XServe in the future and I was wondering if it could take larger HD's like 160 GB's or so. I'm thinking it should be able to but I'm not sure.

XServe supports ATA-100 which has a fixed, hard-limit drive size of 136GB per drive. ATA drives larger than 136GB have to be ATA-133 or higher which the XServe doesn't support.
The absolute max you can put in a XServe is 4 x 136GB ATA-100 drives, or 544GB, and that's assuming you can find 136GB ATA-100 drives. I don't recall seeing any ATA100 drives bigger than 120GB, which may explain Apple's stated 480GB max internal storage.
For more storage space, you'll need an external array like the XServe RAID

There are drivers that will allow drives over 136GB to be attached to an ATA/100 bus and function at full capacity, but they're only for 9 currently (the company hasn't been able to get them working for X yet. MacCentral carried the story a little while back). I wouldn't count on Apple providing a solution for this problem. BTW ATA133 drives will work with ATA100, but at only ~136GB (if they're larger than 136GB). I'd wait for SerialATA before shelling out serious money on hardware though.
