I am looking for a cheap copy of Mac OS X Server. Sadly, I am not a student so that avenue is not available for me. Any links or suggestions are greatly appreciated!

Well since MacOS X Server 1.2 is a about $500, for the non-student. You could always join the ADC (Apple Developer Connection). The select membership is like $199/yr, and they offer a special to members. Something like a copy of MacOS X Server 1.2 w/ 5 Client Licenses for $99. So for $300 you could get Server this way, I don't know if it is limited in any way. And plus then you might get a copy of OS X DP4, which is really nice.

I would want computer science students to have their hands on as much high end software as possible. A lot of great innovations come from CS students having access to this stuff.

Though I agree for non-technical students - they really don't need it.
