Just a thought, since OSX server is essentially osx client DR2 with the server packages on top, would it be possible to install the server packages onto an osx client?

Are you talking about OSXS 1.2 or the upcoming OSXS 2.0? I think the former, no, but the latter, yes. They aren't shipping OSXS 2.0 yet, they'll do so a few months after OS X Client.

I'm talking about the apps from OSXS 1.2 They're written in NextStep, which is basically a subset of cocoa. granted there might be some interface problems, but I think that it would be worth a try. OSXS 1.2 in aqua...
