A friend and I are dabbling with an idea of starting a magazine, any software out there that would get us up to speed a bit on actually creating the content on paper (that doesn't cost an arseload) that we could toy with?

You do not want to produce a magazine on cheap shareware type software. Get a demo of Indesign of Pagemaker and try those out.
If you really want to go the free or cheap route in the long term, the demos of the Adobe Apps are only for 30 days. you could give Ragtime a shot, it is supposed to be a 'professional quality' DTP app. It's lots cheaper than In Design. and even free for non commercial use.
