Probably your best option would be to try to run UnErase searching for File Types.
If you had Norton Utilities installed on your machine prior to the crash, Volume Assist would have been able to create a "back-up" of your drive's directory, so that when your drive was accidentily initialized you would have been able to simply restore the backup of the lost directory. More than likely, the majority of your files would have been recovered.
Since there are no Volume Assist or FileSaver Volume files, Volume Recover wouldn't have anything to "recover from" to restore your disk. Your only real option would be to run UnErase and hope that the File Type Templates that we include match your lost data. Note that if you have files that do not match the included file types that you can optionally create your own template(s).
