How would I access my Mac remotely from a PC, aside from using a purely screenshot-based application like VNC?

Depends on what you want to do. You can use SSH. I use VNC sometimes, and it is slow as a dog going from my XP box to my mac. I use RDP the other direction, and it is like lightning.

Yeah, I usually use afp over IP for accessing my mac from a remote mac - is there a similar way to access my mac from a remote windows machine?

It depends on what type of connection you are using.

I wouldn't really reccomend using any of these prodcuts over a modem connection, but over a LAN or broadband they work quite well.
