iTunes just plays one song at a time. It won't go on to the next song. What is wrong?

Yes, iTunes only plays one song at a time afaik.
If iTunes is repeating the same song check the third button at the bottom left that is used to repeat a playlist or single song.
Nasrudin sat on a river bank when someone shouted to him from the opposite side: "Hey! how do I get across?" "You are across!" Nasrudin shouted back.

Might be the program you are running. I haven't tried this in a while, but I used to play UT in OS 9.2 and have iTunes in the background and I would start an iTunes song, and then open UT, turn UT's volume down, and iTunes would only play that one song, and wouldn't go onto the next. Don't know if this is due to the limitations of OS 9 or not, but it might be a good start.

iTunes for me will play all the songs in the current play list, one after the other. Not sure why yours doesn't. If I'm on a long play list, or the whole library, it'll continue playing song after song until I hit Stop or quit. For me, iTunes has always behaved like this.

Are all the songs in the Library selected (with a tick in the box to the left of the title)? I iadvertently deselected all my songs recently and did not realize it until I tried to play some songs. If they have been deselected, control-click on any empty selection box and all the songs in the library will be selected.
Hope this helps.
