OK, so, I hit "junk" on a selected mails, but what happens if I include a mail that is not junk? Where is the "database"? so I can manually check if there are any addresses that shouldn't be there!

Not sure on the database; however, if you accidentally classify an e-mail as "Junk"...all you need to do is find it in your "Junk Box" or "Trash" and when highlighted/opened, you'll see options to make the message "Not Junk"...

Of course, this only works if you haven't gotten rid of the Junk message already...

I think I wrote a rule that deletes all junk...

Hmm, Mail should create a "Junk" mailbox folder for you automatically pending you have made your Junk Filtering "Automatic" instead of the default "Training...

Once you modify the Junk rule to send messages directly to trash, the Junk Folder is no longer available. (Actually, I don't remember for sure if I deleted my Junk folder or if it just went away when I modified the rule.) Anyway, you still have an opportunity to review 'junk' in the trash before you permanently delete it.

I don't think there is a database to review. But I'm pretty sure that if a sender is in your address book then Mail will tend not to view their mail as junk. I do know of examples, however, of Mail correctly identifying virus-propagating messages from my PC-using sister-in-law (who is in my address book) as junk.

If you'd rather not put the sender in your address book, perhaps you could have them send you another email. Mail would once again flag it as junk, which you could then set as "Not Junk". That would probably adequately update the 'database' you're looking for.
