We need a new backup system for the Virginia Tech Women's Center. What we would like to do is use one computer as the server and have it access the other computers and back all the computers up on a CD. Though I do understand there are limitations to everything, but mainly the files it will back up are just office files and the such.

What do you guys suggest? From my understand the school will be paying for this, but nothing too outrageous please. If you were wondering all the computers are running 10.2.8. Thanks in advance.

How about Apple's own free Backup utility. Version 2 is in public beta but should be "official" before too long I would think.

It allows you to set specific folders to be backed up.
It allows you to 'back up to drive' or 'backup to CD/DVD'
It allows you to schedule automatic backups.

Why not set all the computers to backup to a shared drive on your "server" and then set the "server" to back up to CD/DVD ?? Simple, free, and can be scheduled automatically.
