I deleted previous rules in Mail.app, but the color coding for those rules remains. Is this a bug? Is there some way to get rid of the color attributed to the messages?

Select all mails -> Context menu -> Apply Rules ? (free translation from Dutch Mail.app here, could be slightly different but it's the last menu item here.
