Mail.app: strip html, change online status, list font size?

Sorry if this has been asked before...
After installing 10.3, I copied all my Mails from Entourage.X to Mail.app -- which took a good few hours, as Entourage cannot properly export mailboxes that include redirected mails
Anyway, there are a few things in Mail.app that might just make me want to continue using Entourage.X.
First, I'd like to be able to strip html from mail messages. I hate having to read messages in horrible fonts like Avantgarde, and our Outlook-toting clients really love to format their text in it. In Entourage, I use the "strip html" AppleScript, but so far I haven't found anything like it for Mail.app.
Also, the same clients really love to abuse e-Mail even further and send tons of mails with gigabytes of attachments, which then clog up the server. On Entourage, I can easily delete the worst offenders from the server after downloading (and saving the attachments), by clicking on the "Online Status" icon, while still keeping my other mails on the server as a backup. Can this be done in Mail.app too?
Finally, Apple's default font sizes are really large (in OS X as well as in Mail.app), and I'd like to reduce font sizes for the main mail list as well as in the Mailboxes drawer. Again, I've not been able to find a way to do this...

Yes. Just move the offending message from whatever mailbox it's in to a mailbox that is "On My Mac."

First, there is no way to change the font size in the Mailbox drawer, but you can make the mailbox icons smaller (which makes the whole drawer shorter, etc.).
Second, you can change the font (both size and font) of the "main mail list" as well as the default font for messages in the "Fonts and Colors" control panel.

Just tried this, but the mail was still visible on the server (Entourage "allow online access"). Maybe I should add that this is all POP mail, not IMAP. Anyway: if this is the way it works with POP too, does this mean that all mail moved from the mail account's inbox by a rule gets deleted on the server? I tend to keep my mails organized by client or project, so this would not really work well.
