How do I open a song without having it automatically added to my iTunes library?

You can't. I suggest listening with the preview in column view if you don't want it added to your library. Or, just open it manually in a different player, like QuickTime Player.

Don't you think they should add an option to not auto-add things in the preferences?

Are you sure? The only options I see are:
1) Music Folder Location
2) Streaming Buffer Size
3) Shuffle by
4) Keep iTunes Music folder organized
5) Copy files to iTunes music folder when adding to libary
6) Show iTunes icon in system tray
(I'm on Windows)

Never mind. I thought you meant copying the file into your Library folder, not adding an entry into your Library playlist.

Gah, right now I set Winamp as the default player for all files that aren't AAC (i.e., files that aren't songs).
But damn...I want to use iTunes for everything...and I can't, because I don't want random 1 second clips in my library...

I've been using this method as well. Just drag the file down to Quicktime's icon.
