when i select the symbol font in either apps, it just uses the times font instead. this is annoying since biochem presentation i have to do requires the greek alphabet. i really don;t want to have to use powerpoint. Anybody have any solutions? I've also tried cutting and pasting into keynote from word, but it again changes to times..

Use the Character Palette in the Input Menu tab in International Preferences.

It'll put a small widget to the right of the Help menu in the menubar, from there you can enter in all sorts of glyphic fonts, etc.

It's a Unicode difference in OS X.
