I am looking for a way to record video from video streams. Not just for quicktime but also for Real Player and (sorry) Windows Media Player.

Can anyone help me out?

TCPFlow should do the trick. It basically records all traffic incoming or outgoing on a given port.

It's CLIonly though, so you'll have to be comfortable on the command-line to use it.

Snapz Pro can record video, and Snapz Pro 2 (coming soon) is gonna use the same technology as wiretap I believe for its audio, and has a much faster engine for video.
