How do you change or stop the start up
page loading on each launch of Camino.

I've altered the Preferences but it still
pops up at the mozilla site...

Is there some hidden pref, that if a new URL
is not clicked the start page loads ?

The preferences should work. You just have to uncheck the box for loading your homepage both for new windows and new tabs.
