In Apple's MAIL application you can "bounce mail to sender" which tells the email server that sent you the email that your address is not valid.....hopefully getting you off their email list.

now I realize that most junk email has false return addresses, but I still like to bounce the email back.

Is there a way of bouncing mail to sender in Entourage?

yes, and it's an applescript called bouncer. I don't know where to locate it, but a google search should turn it up.
