I ran across this great app HandBrake that makes it very easy to encode your DVD's to MPEG-4 format. There are a few settings that you can play with as well.

Trouble is, I am fairly ignorant when it comes to video codecs and bitrates and such. Could someone who is more informed shed some light on the settings of HandBrake? I've used the default settings so far. The result is of nice quality, but at full screen on my 21" CRT, I see some pixelation. Here is a screenshot of the settings.

i got a feeling that "AVI"'s won't play well on Macs. Something about the codecs, but I think MOV (if available) would work better

(I should've shown the codecs available. They are MPEG-4 (Ffmpeg) and MPEG-4 (XviD).)

These AVI files play fine with VLC, and if you install the Divx codec for Quicktime, they play just fine in Quicktime. I think he's working on more encoding options, but these work well enough.
