First the disclaimer:
1. I don't know how stable this is. Use these instructions at your own risk.
2. This worked for me. It may not work for you.
3. I have nothing to do with the excellent PithHelmet other than I gratefully use it.
4. Read these directions before acting on them. If you don't feel comfortable performing the tasks or understand what is going on, then please don't do anything. Just wait for the next release of PithHelmet.
PithHelmet doesn't work with the new Safari 1.2. It appears to check the version of Safari. If it doesn't match v100, it fails. To get around this you can change the version to v125. This will allow PithHelmet to load, for better or worse (let's hope for the better).
1. Open up the terminal and cd to this directory:
/Library/Application Support/SIMBL/Plugins/PithHelmet.bundle/Contents
2. Edit "Info.plist" with vi/bbedit/whatever
3. Change:
<key>MaxSafariBundleVersion</key>
<integer>100</integer>
to this (you're changing the version from 100 to 125):
<key>MaxSafariBundleVersion</key>
<integer>125</integer>
4. Save the file and restart Safari. PithHelmet should load up.
Good luck.

In the couple weeks I've come to enjoy the lack of ads with PithHelmet so much, that I HAD to implement the hack instead of waiting the 24 hours GoRickey suggested
BTW: I didn't bother with Terminal, but just opened the pkg (control-click --> show package contents) and dragged the plist into TextEdit. I changed the version from 100 to 150 just for good measure ... and Pith is back!
Thanks for tip.

The hack works great. Used the same one. (Someone had it posted on versiontracker)

I'm not sure what you mean by "do not have"... After I updated to Safari 1.2, I got notices that PH didn't load when Safari started, and then (if I remember right) the PH icon still appeared in Safari pref pane but wouldn't respond to being click on.
Now, with the hack described above (I haven't bothered upgrading PH yet since the hack seems to make everything right), I have PH back completely, including all the features in it's pref pane.
Did you upgrade to 2/4/2004 PithHelmet or do hack to fit with Safari 1.2?
