I'm just curious if there are any great advantages of using dual processors with Photoshop and Illustrator. I know that the programs will redraw faster but are there any other significant advantages?

Yep! In some cases, not so much, but in most everything dual processors are where it's at. Lots of RAM and two processors a day keep the lag away.
