I have a copy of some of the songs I've bought (iTMS) on my iBook, which is toast, but I didn't get a chance to deauthenticate it.
How does Apple know which machines are Authenicated and which ones aren't?

iTunes tracks the computers registered to your account using either the serial number or MAC address (it's built-in network ID#).
If you want to de-authorize a computer that no longer works or is no longer in your possession, contact iTunes customer service and they can take care of it.
