I would love to learn more about how to use FileMaker, but cannot find anywhere in St. Louis that offers training. What training/books have others used to learn how to use FileMaker. I have a rudimentary knowledge of how relational databases work.

There are several good books out there for FileMaker Pro v5-6.

A good beginner book to get you going:
FileMaker Pro 6 for Windows and Macintosh: Visual QuickStart Guide

A good overview of FileMaker Pro and relational database design in general:
Special Edition Using FileMaker Pro 5

The best FileMaker Pro reference:
The FileMaker Pro 6 Bible

Of course, FileMaker Pro 7 was released just yesterday, and this product is so different than anything from FileMaker in the past, that the above books will be nearly useless. There will almost certainly be a new bible and quickstart guide forthcoming - no word on their delivery date though.
